Plantain and Egg Frittata which is also known as African or plantain Pizza, is a delicacy which is mouth watering and delicious as well as healthy.

Plantain and egg, is the combination of energy giving food and body building food which makes the two combinations perfect for the body.

Plantain and Egg Frittata could be served for breakfast as well. The original recipe calls for frying plantain but you can definitely bake your plantains as well to reduce calories. If you are counting carbohydrates, you could cheat a little bit by replacing half of your plantains with vegetables like bell peppers before mixture with eggs.

As kids, while growing up, we also loved eating plantain and egg either as breakfast, lunch or dinner.

Below, are the ingredients and recipe to make it;

Ingredients

  1. 1 tablespoon oil
  2. 1/2medium onion thinly sliced
  3. 1scotch bonnet pepper diced sub hot sauce
  4. ½red/green bell pepper stem, ribs, and seeds removed, then thinly sliced in strips
  5. 1small tomatoes
  6. 1teaspoon minced garlic (optional)
  7. 1 teaspoon Fresh thyme
  8. 2-3ripe plantains (depending on how big or small the plantain is, it can be less or more than)
  9. Coarse salt and ground pepper
  10. 6large eggs
  11. 1avocado (optional)
  12. 1/2 -1cup sausage chopped (optional)

Recipe

  1. Adjust the oven rack to the middle position and preheat oven to 350 degrees F. Grease a 10- inch baking pan or muffin pan, set aside
  2. Peel the plantain, and slice it into desired shapes and forms.
  3. Place them on the baking sheets in a single layer; spray lightly over the plantains using the canola oil spray and bake, turning over slices, after 8 minutes for about 12- 20 minutes or till golden brown, depending on your oven.
  4. While the plantains are baking, mix other ingredients, season with salt and sausage beef and any other seasoning of your choice you choose to add.
  5. In a large bowl whisk eggs and add other ingredients to the egg.
  6. Pour mixture into a greased 10-inch baking pan, and when the mixture begins to harden, Layer the baked plantains.
  7. Bake in the oven for about 30-40 minutes; until mixture is firm in the center.
  8. Let it cool for a few minutes; top with avocado or salad if desired.

NOTE

  1. For this delicacy, any oil of choice can be used
  2. A stove and frying pan can also be used if no oven or baking pan.
  3. To reduce calories, one can spray sliced plantain with oil, spread on a baking sheet and bake instead of frying
